  2. 1 cup rice flour
  3. 1 cup water
  4. 1 pinch salt
  5. 1 tbsp desi ghee
  6. For the stuffing
  7. 1 tsp cardamom powder
  8. 1/2 tsp nutmeg powder
  9. 1 whole fresh coconut
  10. 3/4 cup jaggery
  11. 1 tbsp desi ghee

Instructions to make to make Ukadiche Modak

  1. Gather all the ingredients together.
  2. First prepare the stuffing. Remove the brown skin of the coconut and grate it.
  3. In a pan, put 1 tbsp ghee and gently cook grated coconut for 5-6 mins.
  4. Add jaggery and cook for another 4-5 mins till it gets incorporated properly.
  5. Add cardamom powder and nutmeg powder and mix. Remove from heat and keep it aside to cool.
  6. Bring water to a boil, add ghee and salt.
  7. Add rice flour to the boiling water and then reduce the heat to medium.
  8. Stir using a spatula.
  9. Remove the hot mixture in a wide pan or on the slab. Apply water and oil on your hand and knead.
  10. Knead till the dough comes together and is smooth.
  11. Now take a modak mould and apply little rice flour dough inside.
  12. Fill with coconut mixture and then seal it off with some more rice flour dough.
  13. Open the mould and prepare all your modaks like this.
  14. Put all the modaks in a steamer and cook for 10-15 mins.
  15. Once cooked, modaks will become a little translucent.
  16. Serve hot.
  17. Optional: Garnish with a strand of saffron soaked in milk.
