Ingredients and spices that need to be Make ready to make Chatpati Chargha Biryani !:
- For Chargha :
- Either you can take readymade Chargha Masala OR
- 1 tsp white pepper
- Half tsp Nutmeg powder
- Half tsp Mace powder
- 1 tsp turmeric powder
- 1 tsp whole spice powder
- 2 tsp black pepper
- Half tsp Crushed Carom seeds
- 3 tsp cumin powder
- 2 n half tbsp or to taste Red chilli powder
- 1 tsp yellow food colour
- To taste salt
- 2 tbsp lemon juice
- Oil for frying
- Water for steaming
- 5-6 mint leaves
- 3-4 lemon slices
- 2-3 green chillies
- For Biryani :
- Half cup oil
- 2 medium Onion Sliced
- Half tbsp cumin seeds
- 2 sticks Cinnamon
- 1 black cardamom
- 3 green cardamom
- 3-4 cloves
- 5-6 black pepper corns
- 7-8 Curry leaves
- 4-5 medium Potatoes
- 2 tbsp Ginger Garlic paste
- 3-4 Tomatoes sliced
- 1 cup yogurt
- Left over Chargha Masala
- 6-7 green chillies
- 5-6 dried plums
- 5 cups Rice
- Half cup mint leaves
- 2 tbsp chopped cilantro
Instructions to make to make Chatpati Chargha Biryani !
- Marinate chicken with all the mentioned masala except mint leaves, lemon slices, green chillies, oil & water.. n leave it over night for marination.

- Next day fill the half steamer with water.. let it boil... now place grill on it n steam cook the marinated chicken (place mint leaves, green chilies & lemon slices in the hollow area of chicken n tie the legs with thread)... keep the leftover masala aside for later use... steam cook it for 30 to 40 mins.
Now remove the filling n fry chargha until nicely golden. 
- Now prepare Biryani... fry onion n add whole spices..curry leaves n ginger garlic paste n saute it for 2 mins.. now add potatoes.. leftover chargha masala n tomatoes..
- When tomatoes becomes soft, add yogurt, green chillies & dried plums.. cook it until potatoes cooked well & oil seperates.
- Now boil rice in the same water which we have used for steaming chicken.. if required you can add more water to it. Don't Over cook the rice.. strain them when 85% done.
- Now place prepared masala in the bottom of the pot, now spread rice on it... now food colour, mints leaves & Cilantro. & on the top place prepared chargha n give it dumm.

- Keep chargha separate before Mixing rice. Serve with Raita n enjoy !
